These delicious canapés are great for entertaining as they're easy to customise with a range of toppings!
Crumpet mixture:
500ml milk
1tsp caster sugar
7g dried yeast
350g white bread flour
5g bicarbonate of soda
7g fine sea salt
plenty of butter
Topping inspiration, Italian Summer:
Homemade pesto
basil leaves
mini mozzarella balls
cherry tomatoes
Topping inspiration, British Classic:
Cream cheese
Cooked salmon peices
dill
Topping inspiration, Mexican Twist:
Smashed avocado
radish
chopped walnuts
Recipe
Pour the milk into a pan stir in the sugar and heat gently on a low temperature.
Whisk in the yeast and leave to bubble up for about 15 mins in a warm place.
Add the flour, bicarb and salt into a large mixing bowl and whisk together. Once combined, make a well in the centre and pour in the yeasted milk.
Whisk together for about 4-5 mins until the mixture is smooth, thick and creamy.
Cover with a damp tea towel and leave to rest in a warm place for about 45 mins-1hr.
You will have a lovely, risen, bubbly batter.
Melt some butter on a medium-high heat and butter the crumpet rings well. We used 2inch crumpet rings.
Arrange the rings in the pan. Once hot, spoon or pour the batter into the rings, about a third of the way. Don’t overfill as they’ll need room to rise, and for the bubbles to expand.
Cook for 5-6 mins over a medium heat until you can see bubbles appearing on top.
Tip: At about 5 minutes if any bubbles haven’t burst, you can pop them with a fork.
Once the bubbles have burst, use tongs to carefully lift away the rings and turn over the crumpets.
Cook for a further 3-4 mins on the other side. Butter and reheat the rings and pan again before cooking the next batch, and continue until all the batter has been used.
Once cooled you can start to decorate your canapés.
We’ve listed the toppings we used, but the best thing about this recipe is that you can use whatever you like. It’s also great if you have guests with a range of dietary requirements.
Once you’re finished serve with sprinkle of salt and pepper. Serve & enjoy!
